Jamaica
Jamaican food is healthy and flavorful due to all of the fish, fruit, and vegetables used in it's cooking. Spices such as giner, garlic, hot red pepper and allspice are common. Since the weather is usually hot in Jamacia, below you can find a recipe for a cool and fruity marinated shrimp salad.
Shrimp and Fruit Salad
Ingredients
- 12 ounces fresh or frozen peeled and de-veined shrimp
- 1 can pineapple chunks in juice (not syrup)
- 1 medium orange, peeled and sectioned
- 1 medium apple cut in chunks
- 1 kiwi, peeled and sliced
- 1 handfull of strawberries, sliced
- 1 tablespoon snipped fresh mint or 1 teaspoon dried mint, crushed
- dash salt
- dash pepper
- ½ cup sliced celery
- ¼ cup lemon yogurt
Directions
- In a large saucepan, cook shrimp in boiling water about 3 minutes or till shrimp turn pink.
- Drain the shrimp and rinse them under cold water, drain well.
- Drain pineapple chunks, reserving juice.
- Combine fruit, cover and chill.
- For marinade, in a medium bowl combine ¼ cup of the reserved pineapple juice, the mint, salt, and pepper.
- Stir in cooked shrimp and celery.
- Cover and marinade in the refrigerator for 2 hours. Drain off marinade, discard marinade.
- Stir fruit combination into shrimp mixture.
- In a small bowl, combine 2 tablespoons of the remaining pineapple juice and the yogurt. Toss with the with the shrimp mixture.
- For a variation, you can add different kinds of fruit like mango or melon.
